Ingredients: 
2 cups chicken, cooked and shredded  
1/2 cup Monterey jack cheese  
1 1/2 cup cheddar cheese  
3/4 cup chicken broth  
2 tsp taco seasoning  
12 oz cauliflower rice
14 oz Rotel tomatoes  
2 garlic cloves, minced  
1/3 cup green pepper, diced  
1 onion, diced  1 tbsp butter  

Directions: 
1- Melt butter in a pan over medium heat.  
2- Add garlic, pepper, and onion and sauté until softened.  
3- Steam cauliflower rice according to packet instructions.  
4- Add seasoning, broth, cauliflower rice, and Rotel to the pan.
5- Stir well and cook for 10 minutes.  
6- Add chicken and cook for 5 minutes.  
7- Top with cheese and cook until cheese is melted.  
8- Serve and enjoy.
